ITALIAN STYLE CHEESY CHICKEN
CASSEROLE
 
4-5 boneless chicken breasts, cut up
2 tbsp. butter
2 tbsp. minced garlic
1 (16 oz.) tub ricotta cheese
1 egg
1/2 cup milk
2 cups shredded Mozzarella cheese, divided
1 cup Parmesan cheese
1 (24 oz.) jar spaghetti sauce (I like vodka sauce)
salt, pepper, garlic powder, basil and oregano (to taste)

Preheat oven 350°F

Melt butter in roasting pan with minced garlic. Add chopped chicken and spices, mix well. Place in oven and bake at 350°F till cooked (20 to 25 minutes).

In a bowl mix ricotta cheese, egg, milk, 1 cup Mozzarella and 1 cup Parmesan cheese. When chicken is cooked take out of oven. Spread cheese mix evenly on top. Pour spaghetti sauce over cheese, spread evenly. Put back in oven 20 minutes more.

Sprinkle remaining 1 cup Mozzarella on top. Cook 10 minutes to melt.
