CHICKEN CACCIATORE | |
1 lb. boned skinned chicken, cut in strips 1/2 c. chopped onion 2 tbsp. butter or oil 1 (16 oz.) meatless spaghetti sauce 1 1/2 c. water 1 med. green pepper, cut in strips 1/2 tsp. oregano 1/2 tsp. basil 1 1/2 c. dry minute rice Lightly brown chicken and onion in butter in large skillet. Add spaghetti sauce, water, green pepper and seasonings. Bring to full boil. Stir in rice. Cove, remove from heat and let stand 5 minutes. Stir. Makes 4 servings. 440 calories each with white meat chicken - 450 calories each with dark meat chicken. |
