CACCIATORE CHICKEN 
1 c. sliced fresh mushrooms
1/2 c. green pepper, cut into strips
1/4 c. onion, thinly sliced
1 tbsp. water
1/2 c. spaghetti sauce
1/3 c. sliced pitted ripe olives
1 tbsp. tomato paste
1/4 tsp. garlic powder
1 whole med. chicken breast, skinned & halved lengthwise
Hot cooked rice or pasta (optional)

In a 1 3/4 quart casserole, combine mushrooms, green pepper, onion, and water. Microwave uncovered on high for 2 to 3 minutes or until vegetables are tender; drain. Stir in spaghetti sauce, olives, tomato paste, and garlic powder. Add chicken breasts to casserole, turning to coat with sauce. Arrange meaty portions toward outside edge of casserole. Cover. Microwave on high for 10 to 12 minutes or until chicken is tender. Serve with rice or pasta, if desired.

Since microwave ovens vary in power, you may need to adjust your cooking time.
