“SPICY CHICKEN CACCIATORE” IS IN:

SPICY CHICKEN CACCIATORE 
1/3 cup all-purpose flour
2 tsp dried Italian seasoning, divided
1-1/2 tsp salt
1/4 tsp pepper
3-4 lbs bone-in skinless chicken drumsticks
2 tbsp canola or olive oil
1 onion, chopped
3 tsp minced garlic
1 red pepper, cut into 1" pieces
1 green pepper, cut into 1" pieces
1 yellow pepper, cut into 1" pieces
1 (10 oz pkg) fresh mushrooms, halved
1 (28 oz can) fire roasted crushed tomatoes
2 tbsp fresh chopped basil

In bowl, combine flour, 1 teaspoon Italian seasoning, salt, and pepper. Add chicken, one at a time to coat.

In a Dutch oven, with oil, cook chicken over medium-high heat for about 6 minutes. Remove from pan.

Add onions and garlic to pan, cook 2 minutes. Stir in peppers, mushrooms, salt and remaining Italian seasoning. Cook 5 minutes.

Top with chicken, add tomatoes. Cover, let simmer 40 minutes over medium-low heat. Sprinkle with basil right before serving.

I have cooked this twice in the past 30 days, and wife and I love it! The only thing I have added, was 1/2 cup dry red wine, and I add about 12 ounces of peeled cooked shrimp. I also used skinless chicken breast and this is a winner!
