BEEF STEW "COUNTRY - STYLE" 
1 1/2 - 2 lbs. stew meat
1 tbsp. butter
1 lg. onion, slivered
1 can undiluted beef consomme
3 carrots, peeled and sliced
3 parsnips, peeled and sliced
4 celery stalks, sliced
8-10 whole white peppercorns
2 bay leaves

Cut meat into chunks. Brown meat and place in casserole. Add onion and beef consomme. Heat to boil and add spices. Cover. Braise meat for 1 hour. Add carrots, parsnips, and celery. Simmer 30-40 minutes until meat and vegetables are tender. Don't over-cook.
