5 lg. baking potatoes 1/2 c. butter 1 tbsp. salt 1/2 pt. sour cream Chives 2 c. evaporated milk or half and half 1/2 lb. Velveeta cheese Bacon (cooked and crumbled) Boil potatoes until tender. Refrigerate overnight. Grate potatoes and place in large bowl. In saucepan, heat milk, butter, salt and cheese until butter and cheese are melted. Add this mixture to grated potatoes and stir well. Pour into casserole and bake at 350 degrees F. for 40 minutes. Remove from oven and spread sour cream on top. Sprinkle with crumbled bacon and chives. |
