BUTTERMILK PIE 
1 unbaked 9-inch pie shell
1/2 c. (1 stick) butter, softened
1 1/2 c. sugar
3 rounded tbsp. flour
3 eggs, beaten
1 c. buttermilk
1 tbsp. vanilla
Grated rind of 1 lemon (optional, but good)

Preheat oven to 350 degrees. Cream together butter and sugar. Beat in flour, eggs, buttermilk, vanilla and lemon rind. Pour this into the unbaked pie shell and sprinkle liberally with nutmeg. Bake for 45 minutes. It should be slightly browned, although still a little liquid. Don't over bake!
