CREAMY BUTTERMILK PIE 
2 eggs
1 c. sugar
1/4 c. flour
2 tbsp. butter
1/2 tsp. grated lemon rind
2 c. buttermilk
1 (9 inch) unbaked pie shell
Ground nutmeg

Combine eggs, sugar, flour, butter, lemon rind, and buttermilk in bowl. Beat with electric mixer at medium speed until blended. Pour mixture into unbaked pie shell. Sprinkle with nutmeg. Bake in 425 degrees oven 10 minutes. Reduce temperature to 325 degrees and bake 25 more minutes or until knife inserted halfway between the center and edge comes out clean. Cool on rack. Makes 6 to 8 servings.
