CHICKEN AND BROCCOLI QUICHE 
1 (9 inch) pie shell, unbaked
1 c. broccoli, chopped
1 c. grated Mozzarella cheese
1 pt. light cream
1 c. cooked chicken, diced
1/2 c. sliced mushrooms
3 eggs
Salt & pepper to taste

Whip eggs and add light cream and blend. Combine remaining ingredients and pour into unbaked pie shell. Bake at 350 degrees for 35 to 45 minutes. Quiche is done when knife inserted into center comes out clean.
