MEXICAN FRUIT CAKE 
2 c. plain flour
2 tsp. baking soda
1 (20 oz.) can undrained crushed pineapple
2 c. sugar
2 eggs
1 c. chopped nuts

Mix all ingredients. Pour into 9 x 13 inch pan. Bake 35 to 40 minutes at 350 degrees.

ICING:

1 (8 oz.) cream cheese
1 stick butter
2 c. XXX sugar
1 tsp. vanilla flavoring

Ice while cake is warm. Refrigerate cake (better 2nd day).
