SPANISH RICE & CHICKEN 
Leg, thigh, wings and breast of a fryer or any chicken parts
1 c. flour
2 tsp. salt
1/2 tsp. pepper
2 tsp. chili powder
1 1/2 c. oil
2 c. uncooked rice
2 cans tomatoes
2 c. water
2 tsp. chili powder
2 tsp. salt
2 chopped onions
2 chopped bell peppers

Roll chicken in combined flour, salt, pepper and chili powder. Brown in oil; remove from oil when browned. Pour into oil the rice, tomatoes, water, 2 teaspoons chili powder, salt, onion and bell pepper. Do not cook. Place rice mixture in large baking pan. Place chicken on top of rice. Cover tightly with foil. Bake 1 hour and 15 minutes at 325 degrees.
