QUICK VEGIE OMELETTE FOR 2 
1 sm. white onion
Butter
Pinch of garlic powder to taste
8 to 10 mushrooms, chopped
Chinese pea pods, sliced

Saute onion in butter over medium heat. Add garlic powder to taste, mushrooms and pea pods. Stir ingredients on high heat quickly so pea pods stay crunchy (about 1 minute). Lower heat to medium and add 5 eggs (previously mixed in bowl with pepper and 1 tablespoon water). Cook and stir frequently until eggs are firm. Remove from heat. Add chopped tomatoes to cover top of egg mixture. Add Swiss cheese, grated. Layer on top of tomatoes, broil until cheese melts and serve.
