VEGI CHILI 
3 cloves garlic
1 med. onion, chopped
2-3 stalks celery, chopped
1/2 lb. mushrooms, sliced
1 green pepper, chopped
1 tbsp. vegetable oil
1 tbsp. water
16 oz. canned unsalted tomatoes, crushed
16 oz. canned "less salt" kidney beans, drained
3 tbsp. chili powder or to taste

Lightly saute fresh vegetables in oil and water until onions are tender. Add tomatoes, beans and chili powder. Cook covered over low heat 1 hour or longer. Serves 4.
