3/4 c. cider vinegar 2/3 c. sugar (or substitute 8 packets, i.e. 2 2/3 tsp. Sweet 'n Low) 1 tsp. salt 1 tsp. celery seeds 1 tsp. mustard seeds 1/2 tsp. hot pepper sauce 4 c. Green Giant Mexicorn kernels 1 c. diced green bell pepper 1 (4 oz.) jar drained pimentos, chopped 1/3 c. chopped green onions (can use white onions if desired) 1 tbsp. flour (can use cornstarch) Combine first 6 ingredients in a 3-quart bowl and microwave on HIGH until boiling. Add remaining ingredients and microwave on HIGH until mixture boils and thickens; stir frequently after mixture boils for 2-3 minutes. This mixes the spices well. This relish is better after aging overnight. Can be eaten hot or cold. I prefer it cold. |
