CALICO CORN RELISH (Microwave) 
2 (12 oz.) cans whole kernel corn, drained (save the liquid)
1/2 c. chopped celery
1/2 c. diced green pepper
1/4 c. finely chopped onion
2-3 tbsp. sugar
1 tbsp. cornstarch
1/3 c. cider vinegar
2 tbsp. diced pimento

In a 4 cup glass measure, add enough water to reserved liquid to equal 1 1/4 cups. Add celery, green pepper, onion and sugar; heat 3-4 minutes. Stir in cornstarch blended with vinegar and heat 2 1/2 to 3 minutes or until mixture is slightly thickened, stirring occasionally. Add corn and pimento; chill before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
