CHRISTMAS CALICO CORN 
1/4 c. chopped green pepper
1/4 c. chopped onion
3 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/2 tsp. paprika
1 sm. jar pimento
1/4 tsp. dry mustard
Dash pepper
3/4 c. milk
1 (1 lb.) corn (drained) or 2 c. fresh corn
1 egg, slightly beaten
Garnish with sauteed oysters, optional
Buttered cracker crumbs
Shredded Cheddar cheese

Heat oven to 350 degrees. Saute onion and green pepper until golden in butter. Blend in flour, seasonings. Cook until bubbly, remove from heat. Gradually add milk. Bring to boil. Boil 1 minute, stirring constantly. Remove from heat. Add corn, egg and pimento.

Pour into 1 quart baking dish. Top with buttered cracker crumbs and sprinkle with shredded Cheddar cheese. For special occasions add sauteed oysters. Bake 30-45 minutes.
