WHOLE WHEAT BANANA BISCUITS | |
2 c. whole wheat flour 1/4 c. soy flour 3 tsp. baking powder 1/2 tsp. baking soda 1 tsp. sugar 1 tsp. salt 1/2 c. butter, softened 1/2 c. dairy sour cream 1/2 c. (about 1 med.) mashed ripe banana About 1/4 c. milk Put dry ingredients in bowl. Cut in butter until mixture resembles cornmeal. Add next 2 ingredients and enough milk to hold mixture together. Stir with fork only until dry ingredients are moistened. Turn out on lightly floured board and knead 10 turns. Roll gently to 1/2 inch thickness and cut in rounds with 2 inch cutter. Put on ungreased baking sheet, prick with fork and bake in preheated 450 degree oven 10 minutes, or until well browned. Serve at once with butter and jam, if desired. Makes about 20. |
