CHICKEN RICE CASSEROLE 
2 c. chopped chicken
1 c. chopped celery
2 tbsp. chopped onion
1 1/2 c. cooked rice
1 can creamed chicken soup
1 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. pepper
3/4 c. mayonnaise
1/2 c. water
3 hard boiled eggs, sliced
2 c. crushed potato chips

Mix mayonnaise with water. Add first 8 ingredients. Gently stir in egg slices and turn into baking dish (2 quart casserole). Top with chips. Bake at 350 degrees for 20-30 minutes.
