CHEESE-COCONUT FROSTING 
1 (8 oz.) pkg. cream cheese, softened
1/2 c. butter, softened
1 tsp. vanilla
1 lb. powdered sugar
3/4 c. coconut flakes
1/4 c. coconut flakes for topping
4 to 5 drops red food coloring

Cream the cream cheese and butter until well blended and smooth. Add vanilla. Gradually add sugar while beating. Add 3/4 cup coconut and mix well. Spread between layers and on top and side of cake. Combine 1/4 cup coconut with food coloring until evenly tinted. Sprinkle over cake.
