MOLDED CUCUMBER SALAD 
2 chopped cucumbers
1 (3 oz.) pkg. sugar-free lime Jello
1 c. boiling water
3/4 c. cold water
2 tsp. white vinegar
1 tbsp. minced onion
1 tbsp. chopped parsley
Few dashes pepper
1 (3 oz.) pkg. sugar-free lemon Jello
1 c. boiling water
1 (8 oz.) container plain, low fat yogurt

Dissolve lime Jello in boiling water. Add cold water. Cool; then add vinegar, onion, parsley, and pepper. Pour into 6 cup mold until set. Prepare lemon Jello with boiling water in a separate bowl. Cool. Add yogurt and whip. Pour the lemon mixture over the lime mixture. Chill until set. If served without lemon topping, use a 3 cup mold.
