OKRA AND CHEESE CASSEROLE 
4 med. tomatoes, peeled & sliced
1/2 lb. okra, cut in 1/4" slices
1/2 c. chopped onion
1 tsp. salt
1/4 tsp. black pepper
1 lb. cheddar cheese, cut into cubes

Arrange all ingredients in layers in 1 1/2 quart greased casserole dish. Start with sliced tomatoes, then okra, onion, salt and pepper; top with cheese. Cover and bake at 325 degrees for about 40 minutes. Yield: 8 servings.
