CAJUN VEGETABLE SOUP 
3 lb. lean beef stew meat, no visible fat
1 lb. pkg. frozen mixed vegetables
3 lb. red potatoes
3 lg. cans V-8 vegetable juice
1 tbsp. chili powder (optional)
1 tbsp. Weight Watchers butter
Red pepper to taste
1 can whole tomatoes (optional)
1 lg. pkg. frozen corn

Melt butter and add meat to it. Season with red pepper. Brown meat until all pieces are browned. Slowly add V-8 juice and simmer for about 10 minutes. Dice the potatoes in various sizes (the smaller pieces will thicken the soup) and add to meat. Once the soup begins to boil, add remaining vegetables and water if needed. If you prefer more of a tomato taste, add whole tomatoes at this time. Cover pot and cook over medium heat for approximately 1 1/2 hours or until meat is tender.
