OATMEAL ROLLS 
1 c. oatmeal (quick or reg. cook accordingly)
2 c. boiling water
3 tbsp. butter
2/3 c. brown sugar, packed
1 tbsp. white sugar
1 1/2 tsp. salt
2 pkgs. yeast softened in 1/3 c. warm water
5 c. flour

Cook the first 3 ingredients and let cool until lukewarm. Add sugars, salt and yeast. Add and knead in flour. Let rise and then form into dinner rolls. Let rise again and bake 20 to 30 minutes at 350 degrees. Makes a 9 x 9 inch pan. These are moist and freeze well. They can also be made into cinnamon rolls or loaves of bread.
