CRACKLIN' CORNBREAD | |
1/4 c. bacon drippings 2 c. cornmeal 2 tsp. baking soda 1 tsp. salt 2 eggs, beaten 2 c. buttermilk 3/4 c. cracklings Heat drippings in a 10 inch cast iron skillet until hot. Combine dry ingredients; stir in eggs and buttermilk. Add cracklings and hot drippings; mix well. Pour batter into hot skillet. Bake at 450 degrees for 20 to 25 minutes. Yield: 8 servings. |
