EASY CHICKEN CREOLE 
1 c. onion, diced
1 med. bell pepper, chopped
3 tbsp. oil
2 tbsp. flour
1 (6 oz.) tomato paste
2 1/4 c. chicken broth
1/2 tsp. salt
1/4 tsp. sugar
1/4 tsp. hot pepper sauce
2 c. cooked chicken, cubed
1 clove garlic
Pepper to taste

Saute onion, bell pepper and garlic in the oil. Add the flour and stir until brown. Stir in the tomato paste, broth, salt, sugar and sauce. Cook until the mixture becomes thickened. Put heat on low and simmer for 5 minutes, uncovered. Add the chicken and pepper, simmer for 5-10 minutes more. Serve over rice.
