EASY CHICKEN CREOLE 
2 lbs. chicken
2 1/2 c. canned tomatoes and juice
1/2 c. chopped green pepper
1/2 c. chopped onion
1/2 c. chopped celery
1 tsp. salt
1 tsp. sugar
1/2 tsp. pepper
1 1/2 c. uncooked rice
2 bay leaves

Remove skin from chicken and cook in water. Remove chicken when fork tender and cool. Remove bone and cut chicken into cubes. Combine chicken and all other ingredients in saucepan. Cover and bring to a boil. Reduce heat and simmer 20 minutes or until rice is tender and most of the liquid is absorbed. Remove bay leaves and serve. 6 servings.
