CHICKEN ROLLATINI 
6 to 8 thin sliced chicken cutlets
1 egg with 1 tbsp. milk
1 c. Italian bread crumbs
1/2 c. grated cheese
6 to 8 slices Mozzarella cheese
6 to 8 slices deli ham
2 c. College chicken broth
Toothpicks

Beat egg with milk in small bowl. In flat dish, mix bread crumbs and grated cheese. Dip chicken in egg and coat with bread crumbs. Repeat with remaining cutlets. Place slice of Mozzarella and ham on top of cutlet.

Roll and secure with toothpick. Place in deep baking dish, seam down. Repeat with remaining cutlets. Add broth (it should almost cover).

Bake at 350 degrees, 40 to 45 minutes. Serve over rice.
