PINEAPPLE CARROT SALAD | |
1 (No. 2) can crushed pineapple 1 pkg. lemon Jello 1/2 c. sugar 1 c. finely grated carrots 1/4 tsp. salt 2 tbsp. lemon juice 1/2 pt. whipping cream, whipped stiff Drain pineapple. Add enough water to juice to make 1 1/2 cups. Bring to a boil, add Jello. Stir well until dissolved and add sugar, salt and lemon juice. Chill until slightly thickened. Add pineapple, carrots and whipped whipping cream. Fold in gelatin mixture. Chill until thick. |
