CHILI CON QUESO DIP 
1 tbsp. butter
1 sm. onion, minced (1/4 c.)
1 (8 oz.) can whole tomatoes, drained and chopped
1 (4 oz.) can chopped green chiles, drained
1/4 tsp. salt
2 c. (8 oz.) shredded Monterey Jack or process American cheese
1/2 c. mayonnaise
Bottled red pepper seasoning

Place butter and onion in a 1-quart microwavable bowl. Microwave on high 2-3 minutes or until onion is tender. Add chopped tomatoes, chiles, 1/2 teaspoon sugar (optional) and salt. Microwave on high 1-2 minutes, or until bubbly. Stir in cheese and mayonnaise. Microwave on high 1-2 minutes more or until cheese melts. Stir in red pepper seasoning to taste. Transfer to chafing dish. Keep warm. Makes 2 cups.

Since microwave ovens vary in power, you may need to adjust your cooking time.
