BAKE AHEAD STUFFED POTATOES 
8 med. baking potatoes
1/2 to 3/4 c. heated milk
4 tbsp. butter
1 c. shredded Cheddar cheese
1 egg
2 green onions finely chopped
1 1/2 tsp. salt or to taste
1/4 tsp. pepper

Bake potatoes, cut lengthwise, scoop out potato and mash, leave 1/4 inch space around shell so it will hold shape. Add ingredients, whip and refill potato skins. These are ready to serve or you can freeze or they store in refrigerator for a day or so. Bake 350 for 30 minutes. If frozen bake 350 for 1 1/4 hours.
