OATMEAL ICEBOX COOKIES 
1 c. shortening
1 c. sugar
1 c. brown sugar, packed
2 eggs, beaten
1 tsp. vanilla
1/2 c. flour
1 tsp. baking soda
1 tsp. salt
3 c. quick cooking oatmeal
1 1/2 c. coconut, shredded
1 1/2 c. nuts

Sift flour, soda and salt together; set aside. Cream shortening, sugar and brown sugar. Add beaten eggs and vanilla. Combine flour and creamed mixture. Stir in oats, nuts and coconut. Shape into 2 or 3 rolls. Wrap in waxed paper and chill. Slice and place on greased cookie sheet. Bake in 350 degree oven for 10 minutes.
