SPINACH MARINARA CHICKEN W/
PENNE
 
1 (10 oz.) box frozen spinach
2 (24 oz. ea.) jars marinara sauce (or your favorite homemade sauce)
1 lb. boneless skinless chicken, diced (smaller is better)
1 (16 oz.) pkg. penne pasta

Prepare pasta according to package directions. Drain.

Adjust stove to medium low heat. Add one jar of marinara sauce to a large pot that has a lid. Place the spinach in the middle of the pot. Add diced chicken around spinach. Pour second jar of marinara sauce over chicken and spinach (make sure everything is covered). Put on lid and cook for 30 minutes (or until spinach and chicken is cooked through and sauce is hot).

Take off stove-top. Add pasta and stir.

This meal is super simple and feeds up to 8 people. You can play around with this meal so that it fits your families tastes.
