OAT-APPLE COFFEE CAKE 
1 1/2 c. regular oats, uncooked
2/3 c. sugar
1/3 c. butter, softened
1 c. buttermilk, non-fat
1 egg
3/4 c. flour, all purpose
1/2 c. flour, whole wheat
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 lg. apple, peeled, cored & thinly sliced
Vegetable cooking spray

Combine first 5 ingredients in a large bowl; stir well. Combine all purpose flour and next 5 ingredients; add to oat mixture, stirring just until blended. Spoon batter into a 13"x9"x2" baking pan that has been coated with vegetable cooking spray. Press apple slices into batter to make evenly spaced rows. Bake at 375 degrees for 35 to 45 minutes or until wooden pick comes out clean when inserted. Let cool for 15 minutes. Drizzle with orange glaze.

ORANGE GLAZE:

1 c. powdered sugar, sifted
1 tbsp. + 2 tsp. orange juice

Combine powdered sugar and orange juice in a small bowl; stir until smooth.
