APPLE CAKE 
1/2 c. shortening
1/2 c. brown sugar
1 c. sugar
2 tsp. baking soda
1 c. sour milk or buttermilk
2 eggs, beaten
2 1/4 c. flour
1 tsp. cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
2 c. diced, peeled, raw apples

STREUSEL TOPPING:

1/4 c. brown sugar (packed)
1/4 c. sugar
3/4 c. chopped nuts
1/2 tsp. cinnamon

350 degree oven. Grease 9x13 pan.

Cream shortening and sugars. Dissolve soda in sour milk. Add eggs, flour, cinnamon, nutmeg and salt, mixing well. Fold in apples. Turn into pan, spreading to edges.

Streusel topping: Combine all ingredients. Sprinkle evenly on cake before baking. Bake 30 minutes until toothpick comes out clean.

Everyone loved this cake! I reduced the brown sugar to 1/4 cup and 3/4 cup of white sugar; used half whole wheat flour and used fat free Greek yogurt in place of the buttermilk. Delicious! These apple cakes often call for so much sugar that your mouth burns afterwards.
