APPLE CHEESECAKE 
2 pkg. unflavored gelatin
1/2 c. cold water
1/2 c. boiling water
4 tsp. brown sugar substitute
1 1/3 c. ricotta cheese or cottage cheese
1 1/2 c. buttermilk
1 tsp. cinnamon
Dash of cloves
Dash of nutmeg
2 baked apples
1 c. graham cracker crumbs

Dissolve gelatin in cold water in blender. Add the boiling water, brown sugar substitute and blend. Add the cheese, buttermilk, apples and spices; blend until smooth. Pour into a 10 inch deep dish pie pan. Sprinkle graham cracker crumbs over the top. Refrigerate until set.
