APPLE RAISIN CHEESECAKE | |
2 c. vanilla wafer crumbs 6 tsp. butter, unsalted, melted 1/4 tsp. cinnamon 1 1/2 lb. cream cheese, softened 1/2 c. heavy cream 1/2 c. sour cream 1 tsp. vanilla 1 c. apple pie filling 1/2 c. golden raisins 3 eggs 3/4 c. sugar Preheat oven to 350 degrees. Butter sides and bottom of pan. Grind a fresh box of wafers in a blender until crumbs. Mix with butter and cinnamon. Mix well with a pastry cutter and pat well into the buttered bottom of a springform pan. Refrigerate while making the filling. Cream the cream cheese with the granulated sugar and eggs, 1 at a time, until there are no lumps. Add heavy cream and sour cream, and vanilla and cream together. Add the apple pie filling and cream. Add raisins (at the end) and cream slightly. Pour filling into the refrigerated crust. Bake at 350 degrees for 1 1/2 hours to 1 hour and 15 minutes. (Check at 1 hour and 15 minutes. If medium brown, it's done.) |
