CHICKEN CHILEDRON (SPANISH
CHICKEN IN A POT)
 
1 fryer chicken, cut into 1/8th's

Flour and season chicken with salt and pepper. Fry until well browned. In large saucepot bring 2 quarts chicken broth to boil then reduce to simmer. Add following ingredients to broth: 1 sliced red pepper 1 sliced green pepper 1 whole serano chili pepper (chopping or slicing chili pepper will increase spicey flavor) 8 sprigs cilantro 1 sliced red onion 12 small mushrooms left whole 1 lg. tomato diced

Add chicken to broth. Simmer 15 minutes and serve.
