BEEF STROGANOFF 
1 lb. ground beef
1/4 c. minced onion
1 clove garlic, minced
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika
1/2 c. sliced fresh mushrooms, or 4 oz. canned mushrooms
1 can undiluted cream of chicken soup
1/2 c. sour cream or 1/4 c. plain yogurt

In medium skillet, cook ground meat and onion until meat is no longer pink, and onion is transparent. Stir in garlic, seasonings and mushrooms; saute 5 minutes. Add soup; simmer, uncovered, 10 minutes. Stir in sour cream; heat through. Garnish with snipped parsley, chives, or dill. Serve on fluffy rice or mashed potatoes. Makes 6 servings.
