“CHOCOLATE CHIP ZUCCHINI BREAD” IS IN:

CHOCOLATE CHIP ZUCCHINI BREAD 
3 cups flour
1/2 cup granulated white sugar
1 cup brown sugar
1 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1/4 cup cocoa (plus extra for dusting pan)
1 tsp. cinnamon
3 eggs
2 cups grated zucchini (unpeeled)
3/4 cup vegetable oil
3 tsp. vanilla
1/2 cup chopped walnuts
6 oz. chocolate chips

Preheat oven to 350°F.

In a large mixing bowl, combine all dry ingredients. Beat in eggs, oil, vanilla and grated zucchini. Add dry ingredients to wet mixture and mix well. Add nuts and chocolate chips.

Grease pans. Dust lightly with cocoa.

Pour batter into 2 loaf pans or 4 to 5 mini loaf pans, or into muffin pans (about 24).

Bake at 350°F. Large loaves take about 50 to 60 minutes; mini-loaves about 30 minutes; and muffins about 15 to 20 minutes.

Linda of Ohio! I floured my chocolate chips with a small amount of flour, kept them from sinking to the bottom and sticking!!

We loved this recipe!! I made it for a women's bible study and it was all gone within 5 minutes! I never had the chance to try the first batch I made! My son (8 years old) and one of his friends ate an entire loaf for a snack! I think I need to plant more zuke's next year!

I cut this recipe in half and reduced the white sugar by 2 tbsp. It seemed a bit dry so I added the other portion of egg (instead of three eggs cut down to 1 1/2 egg). I added all three. Used toasted pecans and dark chocolate chips. Amazing!! It made 15 nice muffins and baked 17 minutes

I have tried this very good and usually add one eighth (1/8) teaspoon cloves, good either way.
