OYSTER BURGERS 
1 (16 oz.) jar shucked oysters, drained and chopped
1 1/4 c. herb-seasoned stuffing mix
2 tbsp. cracker meal
1/4 c. chopped green onions
1/4 c. minced parsley, or 1 1/2 tbsp. dried
1/4 c. mayonnaise
1 tbsp. lemon juice
1/8 tsp. cayenne pepper
1/8 tsp. pepper
2 tbsp. cracker meal or fresh bread crumbs

Mix all ingredients together except for 2 tablespoons cracker meal or fresh bread crumbs. Shape into 4 1/2 cups patties and coat in the 2 tablespoons meal or crumbs. Heat 1/2 teaspoon oil and 1/2 teaspoon butter (per pattie) in frying pan. Add oyster burgers and cook over medium heat until golden brown, about 3-4 minutes each side. Serve on a warm, toasted burger roll with tartar or cocktail sauce. Garnish with crisp lettuce. Serves 4. Calories per serving: 402.
