PASTEL WHIP 
1 pkg. sugar-free Jello gelatin, any red flavor
1 c. boiling water
2 c. ice cubes
1 c. (1/2 pt.) plain low-fat yogurt
1/2 tsp. vanilla (or try almond extract with cherry Jello)

Dissolve gelatin in boiling water. Add ice cubes. Stir until gelatin starts to thicken, 3 to 5 minutes. Remove any unmelted ice. Add yogurt and vanilla. Beat with rotary beater until light and fluffy. (Mixture may be thin.) Pour into serving dishes or individual plastic containers. Chill until set. Makes about 3 cups or 6 (1/2 cup) servings.
