PRETTY PASTEL COOKIES | |
1/2 c. butter, softened 1/2 c. (firmly packed) brown sugar 1 egg 1 c. all-purpose flour 1/2 tsp. baking soda 1/2 tsp. salt 1/2 c. flaked coconut 1 tsp. grated lemon or orange peel Red, green and yellow food coloring Cream butter and sugar until light and fluffy. Add egg and vanilla; mix well. Combine flour, baking soda, salt, coconut and lemon peel. Gradually add to creamed mixture, mixing until well blended. Divide dough into 3 portions. Tint each portion with few drops of food coloring. Shape each portion of dough into roll 16 inches long. Place rolls on waxed paper. Press together gently to form 1 roll. Wrap securely; chill thoroughly. Slice 1/8 inch thick; place on cookie sheet. Bake at 375°F for 5 to 7 minutes or until set. Makes 7 1/2 dozen cookies. |
