SCALLOP ELEGANTE 
1/3 c. Lipton onion butter (recipe below)
1/2 lb. mushrooms, sliced
1 lb. scallops
1/2 c. dry white wine
1 tbsp. parsley
2 tbsp. grated Parmesan cheese
Toast points or rice

In medium skillet melt Lipton onion butter and cook mushrooms until golden; add scallop, wine, and parsley. Simmer 5 minutes or until scallops are tender. Turn mixture into 4 serving dishes or 1 quart baking dish.

Sprinkle with cheese and broil until golden brown. Serve with toast points or over rice.

LIPTON ONION BUTTER:

1 env. onion soup mix
1/2 lb. butter, softened

Thoroughly blend and store covered in refrigerator.
