1 peck green tomatoes 1 qt. lg. gherkins 2 green peppers 4 onions 2 qt. cider vinegar 1/2 lb. salt (1 c.) 1/2 lb. sugar (1 c.) 1 tbsp. whole black peppers 1 tbsp. celery seeds 1 tbsp. mustard seeds 1 tsp. whole cloves Chop the tomatoes, gherkins, peppers and onions; mix with the salt and set aside for 12 hours. Drain well, then press to get out all super fluous liquid. Heat the vinegar, sugar, and spices, add the chopped pickles and bring to boiling point. Pack into hot jars and seal. |
