HONEY COOKIES 
1 1/2 c. sugar
1 c. shortening
4 eggs
1 c. honey
1/2 c. coffee
10 drops anise oil
2 tsp. vanilla
4 tsp. baking soda
6 1/2 c. flour (about 7 1/2 c. if rolling cookie dough)

Cream butter and sugar. Add eggs, honey, coffee, anise and vanilla. Blend. Stir in soda and flour. For soft dough - drop by teaspoon and bake at 350 degrees. To roll - roll on counter using a lot of flour. Use cookie cutter.

FROSTING:

Soak:

1 pkg. Knox gelatin in 3/4 c. cold water

Add:

3/4 c. sugar
Pinch salt

Bring to boil and simmer 10 minutes. Watch closely and stir often.

Put in large bowl:

3/4 c. powdered sugar

Pour above mixture in, beat until foamy.

Add:

3/4 tsp. baking powder

Beat until stiff.

Add:

1 tsp. vanilla
4 drops anise oil

Frosting dries to a hard, shiny glaze.

It looks like a nice recipe, only I would substitute coconut oil/butter for the shortening,
and use brown sugar, or molasses, in place of white sugar to make it healthier. YUM!
