“FIG HONEY COOKIES” IS IN:

FIG HONEY COOKIES 
1 cup dried figs, soaked
1 tbsp. dark rum
1/2 cup shortening
3/4 cup sugar
2 eggs, beaten
1/2 cup honey
2 tbsp. milk
2-3/4 cup flour
1/2 tsp. salt
3 tsp. baking powder
1/2 cup coconut
1 tsp. lemon extract
3 tbsp. orange rind, chopped

Allow to soak 10 minutes. Bring to a boil, then simmer for an additional 10 minutes. Drain and cool. Chop into small pieces.

Cream together the shortening and sugar until light and fluffy. Stir in eggs, honey, milk, and mix thoroughly.

Sift together the dry ingredients; flour, baking powder, and salt. Add coconut, orange rind, lemon extract. Combine all; stir in the figs last.

Drop by tablespoonfuls onto greased baking sheets.

Bake in a preheated 425°F oven for 12 to 14 minutes.

When I read the recipe, it sounded really good. So I decided to try it. Unfortunately, this is one that did not make it in my book. I followed the instructions to the letter and baked the first two dozen in the middle rack of the oven (correct temperature of 425 degrees) for 12 minutes. They came out burned on the bottom and doughy (like a cake) on top. Just what I not what I expected. Then I baked the last dozen in the highest rack with a little better results.

Sorry about your results. Baking results do vary from oven to oven and between different bakers. One bit of advice about baking cookies is to keep a sharp eye and not walk away - your cookies may take less or more time than any recipe states due to many variables.

Try baking a few cookies first to see what's best for your own oven.

You might also want to check your oven with an thermometer or have it serviced. Burnt on the bottom and uncooked on the top at the center rack can mean your top element is under performing or malfunctioning.

Always preheat any oven for 15 minutes before starting to bake for the best results. If your cookies consistently burn underneath, try air bake sheets or use two cookie sheets stacked or line the sheet with a silicone liner such as Silpat.
