LIVER SPREAD | |
3 lbs. liver 1 1/2 lbs. fat fresh pork 2 tbsp. salt 1 tsp. pepper 1/2 tsp. cloves 1 med. onion 3 eggs, beaten 6 tbsp. fine dry bread crumbs 1/2 c. water Wash liver and remove veins and membranes. Grind raw liver and pork twice through 1/8 holes. Combine eggs, water, bread crumbs, onion, salt and spices, add to liver. Pack in pint or 1/2 pint jars, leaving 1" headspace. Seal. Can in water bath for 40 to 50 minutes. I have used bacon instead of pork. |
