CARROT CAKE 
2 c. flour
2 c. sugar
2 c. grated carrots
1 1/2 c. Wesson oil
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
4 eggs, whipped
1/2 c. nuts, chopped

Mix all ingredients well except flour and carrots. Then add flour and carrots. Bake for 35 minutes at 350 degrees. Makes 2 layer pans.

ICING:

8 oz. pkg. cream cheese
1 box powdered sugar
1 stick soft butter
3 tbsp. can milk
1/2 c. nuts

Mix well icing mixture. Spread on cake. If too stiff add a little more milk.
