AUNT KATHRYN'S TEXAS CARROT CAKE 
Mix:

2 c. flour
2 tsp. baking soda
2 c. sugar
4 eggs
1 1/2 c. Wesson oil
3 c. grated carrots
1/2 c. pecans

Pour into a 9 x 13 inch ungreased cake pan. Bake at 350 degrees for 35-40 minutes.

ICING:

6-8 oz. cream cheese
1 stick butter
2 c. powdered sugar
1 tsp. vanilla

Mix ingredients and spread on cooled cake.
