JIM'S ORIGINAL CARROT CAKE 
2 c. all-purpose flour
2 c. sugar
1 1/2 c. Wesson oil
4 eggs
2 tsp. baking soda
1 tsp. salt
2 tsp. baking powder
2 tsp. cinnamon
3 c. finely grated carrots
1 c. chopped pecans

Blend all together. Pour batter into 3 cake pans. Bake 30 minutes at 325 degrees.

ICING:

1/2 stick butter
1 box confectioners' sugar
8 oz. cream cheese
1 tsp. lemon extract

Blend icing ingredients adding sugar slowly. Ice the cake when cool.
